Ingredients
- 3 ½ cups of broccoli florets or 1 medium head of broccoli
- 2 cloves garlic
- ½ cup chickpea flour
- 1 Tbsp ground flax seed
- 2 Tbsp nutritional yeast
- 2 tsp onion powder
- 1 tsp sea salt
- Olive oil (for frying)
Instructions
- Steam the broccoli florets till they are just tender.
- Remove the cooked florets from heat and allow to cool completely. Then, chop them upfinely.
- Mix the chopped broccoli with the flour and remaining ingredients. Combine the mixture thoroughly until it holds shape.
- Divide the mixture into 4 equal portions. Shape each of these portions into four patties of equal size.
- Pour up to 1 inch of oil in a skillet and place it on medium-high heat. Once the oil iswarm, gently place the fritters in the pan. Leave plenty of space between themso they cook evenly.
- Flip the fritters over when one side is golden brown and let the other side cook. Eachside should take approximately two to three minutes.
- Once the fritters are golden brown, remove them from heat. Transfer it to a paper towel andget rid of the excess oil.
- Serve them with non-dairy yogurt or sugar-free ketchup and enjoy!
