Somen Noodle Salad

Many people think that cooking Japanese meals is difficult, elaborate, and expensive. In reality, you would be surprised how easy and budget-friendly they can be. For instance, this traditional Somen Noodles Salad can be done in just under 10 minutes and cost less than $1 per serving.

This super delicious and refreshing recipe is perfect when you don’t have time to cook!

What are somen noodles? They are thin Japanese style wheat noodles. You can find them online or in most local Asian supermarkets. Traditionally in Japan, somen noodles served during the hot, humid Japanese summer nights. However, you can prepare them at any time of the year. This somen salad also can be made ahead and taken for lunch to work or school.

Ingredients

  • 1 small cucumber, peeled peeled
  • 2 bundles somen noodles
  • 2 cups baby lettuce, washed washed
  • For the dressing:
  • 2 Tbsp low sodium soy sauce
  • 2 Tbsp water
  • 1 Tbsp rice vinegar
  • 2 tsp maple syrup
  • 2 tsp fresh ginger, minced
  • ½ tsp sesame oil

Instructions

  • Peel the flesh of cucumber lengthwise, using a little pressure to make thin ribbons. Set aside.
  • In a small bowl, whisk all ingredients for the dressing and set aside.
  • Bling medium pot of water to boil. Add somen noodles and cook for 1 minute. Carefully drain, then rinse them with cold water to stop cooking.
  • Assemble the bowl with noodles, baby lettuce, cucumber ribbons, and dressing. Enjoy immediately!
