I absolutely love loaded miso soups. Miso paste has a rich, mushroomy umami flavor that brings all ingredients together in one flavorful comforting bowl of soup.
For today’s version I made my miso soup with vegetable potstickers, seaweed, and baby bok choy. Sprinkled with sesame seeds and scallions to make that first bite pop!

Ingredients
- 1 ½ cup water
- 1 Tbsp light miso paste
- 4-6 frozen vegetable potstickers Feel Good Foods Vegetable Potstickers
- 2 small baby bok choy
- ½ tsp dried seaweed Dulse Whole Leaf | 2oz Bag | Organic Seaweed | Maine Coast Sea Vegetables
- ½ tsp sesame seeds
- 1 tsp scallions, chopped
Instructions
- In a small pot, bring water to boil. Add miso paste and potstickers.
- Reduce heat and simmer for 5 minutes.
- Add the rest of the ingredients and simmer for 1 more minute. Enjoy!
