This Asian Beefless Seitan with Noodles is so incredibly easy to prepare and will become your favorite! It is smoky, slightly spicy, and sweet. The beautiful intense flavors come from smoky soy sauce, light miso paste, toasted sesame seeds, fresh garlic, and spicy ginger. This recipe cooks super-fast and perfect for a weeknight dinner!

Ingredients
- For the sauce:
- 1 Tbsp soy sauce
- 1 Tbsp maple syrup
- 1 Tbsp tomato paste
- 2 Tbsp water
- 1 Tbsp corn starch
- 2 tsp light miso paste
- 2 tsp Sriracha hot sauce
- ½ tsp sesame oil
- Other:
- 4 oz of your favorite noodles or pasta
- 2 tsp canola oil
- ½ pound seitan, sliced thin
- 2 tsp fresh ginger, minced
- 1 garlic clove, minced
- 1 small shallot, chopped
- 2 tsp toasted sesame seeds
Instructions
- In a small bowl, combine all ingredients for the sauce. Whisk well and set aside.
- Prepare the noodles according to package directions. Drain them well and set aside.
- Add canola oil and seitan to a large skillet. Sauté for 2 minutes, until the seitan becomes golden brown on all sides.
- Add fresh ginger, minced garlic, and chopped shallot. Cook for 1 more minute,constantly stirring.
- Pour on the sauce, mix well and sauté for 1 more minute. Toss in noodles and sprinkle with sesame seeds. Serve immediately, drizzle with more soy sauce if needed.
