This vibrant, spiced mocktail brings together the cozy flavors of apple cider, cinnamon, and star anise, finished with a refreshing splash of kombucha. Perfect for holiday gatherings or a cozy night in!

Ingredients
- 2 medium apples, diced
- 4 cinnamon sticks
- 4 star anise
- 1 cup apple cider
- 2 cups Kombucha, (ginger or apple flavor recommended)
- 1 tsp cinnamon powder
- 1 tsp sugar
- 1 Tbsp honey
Instructions
- Prepare the Spiced Ice Cubes: In a large ice tray, place one cinnamon stick and one star anise in each section. Add diced apple to each section, then pour apple cider over the ingredients until each section is filled
- Place the tray in the freezer and freeze until solid, about 4-6 hours or overnight.
- Create the Cinnamon Sugar Rim: On a small plate, mix the cinnamon powder and sugar. Lightly coat the rim of each glass with honey or maple syrup, then dip the rims into the cinnamon-sugar mixture until evenly coated.
- Assemble the Mocktail: Remove the spiced apple cider ice cubes from the tray and place them in each glass.
- Pour about ½ cup kombucha into each glass, letting it fizz over the ice cubes and release the spiced aroma. Enjoy!
