The words Halloween and healthy don’t seem to go together. When we think of this fun Fall holiday, we instantly think of piles of candies and all kinds of sweet treats. However, if you are hosting a spooktacular adult party, this salad would be the perfect addition to your table.
It’s simple to make yet looks super fancy, which is the key to any Autumn theme party! This Halloween pasta salad is spooky, dark, fun, and delicious! It is a combination of Black Bean Sesame Fettuccine, cucumber ribbons, fresh carrot, and the delicious sweet sesame dressing.

- vegetable peeler or mandoline
Ingredients
- 1 large seedless cucumber
- 2 tsp rice vinegar
- 1 tsp salt
- 1 small carrot, peeled
- 1 box 1 box Explore Cuisine Black Bean Sesame Fettuccine
- For the sauce
- 3 Tbsp soy sauce
- 3 Tbsp rice vinegar
- 1 Tbsp sesame oil
- 2 Tbsp maple syrup
- 2 Tbsp lemon juice
- 2 Tbsp sesame seeds
- 2 tsp Sriracha hot sauce
Instructions
- Using the vegetable peeler or mandoline, slice the cucumber lengthwise into thin ribbons. Arrange the cucumber slices in a single layer on a large plate, drizzle with vinegar and sprinkle with salt. Set aside.
- Create ribbons from the carrot and set aside.
- Prepare the fettuccine noodles according to the package directions. Drain the pasta and place it into the large deep bowl.
- In a medium-sized bowl, whisk together all ingredients for the sauce.
- Drain the water from the cucumber ribbons.
- Add cucumber, carrots, and the sauce to the fettuccine pasta. Gently toss them.
- Place this Spooktacular Fettuccine Salad into the refrigerator, covered. Allow it to marinate for one hour.
- Serve sprinkled with sesame seeds. Happy Hawl-o-ween!
